Somewhere between the last of the July corn and the first honest chill off the West Branch, Delaware County shifts gears. The porch reading gets shorter. The dinner reservations get harder. If you have lived here for a few summers you already know the rhythm, but this August has more moving parts than usual.
Three restaurants opened in the last two months. A psych-rock festival is landing in a stained-glass hall in East Meredith. An art tour that started as a scrappy experiment in the 1990s is turning thirty. None of these are happening in the same village, and that is the point.
The forty-minute radius has changed
For years the working shorthand for a Delaware County weekend was Brushland, a hike, and maybe a drive to Bovina Farm & Fermentory if you booked far enough ahead. That circuit still works. What is different in 2026 is how much has crowded in around it.
Drive a rough circle from Delhi through Margaretville, Andes, Bovina, East Meredith, and Walton and you are looking at forty minutes of road, four brand-new or reopening kitchens, one destination festival, and half a dozen anchors that were already earning national write-ups. That density did not exist two summers ago. It is the reason your friends from the city keep asking to visit in September instead of July.
Three kitchens that weren't here last summer
Rae's, Margaretville
James Bailey and Alexandra Rosenberg opened Rae's in July, named for owner Rosenberg's grandmother, serving a rotating seasonal menu of comfort food spins inspired by her repertoire and Bailey's upbringing in Texas, from chicken schnitzel to chile en nogada made vegetarian here, plus house cocktails, natural wines, and local beers. If you have been driving past the old space wondering when it would come back, that is your answer. Book a weeknight. Weekends are already tightening.
Dear Native Grapes tasting room, Walton
Also new in July. Walton welcomed the much-anticipated opening of Dear Native Grapes' tasting room, whose natural wines, made from nearly-extinct native varieties, contemporary hybrids, and experimental cultivars offer a distinctive departure from the region's renowned spirit- and beer-making, and the new tasting room offers a relaxed, dog-friendly setting to savor them while soaking up Catskills views. Bring the dog. This is the closest thing the county has to a proper wine bar and it is not trying to be one, which is the appeal.
Pony's, Delhi
The Delhi Diner has been dormant long enough that some newer residents have never eaten there. In Delhi, an old favorite is getting a second act; the former Delhi Diner is currently being transformed into Pony's, with an expected opening in October. Watch for it. If you have opinions about what a diner-format space should serve in a college town, this is the one to keep an ear on.
Three openings in three villages, none of them competing with each other, all of them within thirty minutes of Delhi. That is not a coincidence. That is a county that has quietly become a place chefs choose.
One Saturday: August 22
If you only carve out one date this month, make it this one.
The West Kortright Center will host Bucolic Valley, an intimate one-day psychedelic rock festival, on Saturday, Aug. 22 in the Western Catskills, featuring a full day of music, colorful psychedelic visuals and offerings from hand-picked local vendors, co-organized by the West Kortright Center with Diana McShane and Chris McShane. The venue matters as much as the lineup. Performances will take place on both the scenic outdoor stage with stunning views from the valley in the western Catskills and the historic indoor stage known for its acoustics and stained glass windows, at the West Kortright Center in East Meredith.
Headliners and lineup: Queens-based The Mystery Lights headline the festival, known for their visceral energy and relentless live shows, with a preliminary lineup that includes Los Angeles country-psych band Windows, Kid Bess and the Magic Ring, Gracie Gray, uncleshake, Pleasure Dome and Düül Suns. This is the first year for the festival, which is worth noting for anyone who has watched an East Meredith event grow into something people plan flights around.
Passes are on sale through the West Kortright Center. If you have never been to a show in that stained-glass hall, that alone is the reason to go.

Two of those deserve extra context. The Stagecoach Run has been running long enough that it is easy to take for granted, but the Stagecoach Run Art Festival opens up in mid-July, celebrating 30 years in 2026, which is worth marking if you have not been in a few seasons. And the Maple Shade Hootenanny returns Oct. 11–12 at Maple Shade Farm in Delhi, a weekend-long celebration of fall featuring corn mazes, hayrides, live music, and farm-fresh fare, all set against a backdrop of peak foliage. That is the weekend to have out-of-town family up.
The anchors still doing the heaviest lifting
New openings get the ink. The tables that have been here for years are what actually holds the county's food identity together.
Brushland Eating House, Bovina. Brushland Eating House is listed by Conde Nast as "One of the World's Best Restaurants with Rooms," and was even honored with a James Beard nomination. Reservations are the whole game.
Bovina Farm & Fermentory. During their season, which is May through October, Bovina Farm & Fermentory is open to the public for Saturday Dinner Parties, Kitchen Suppers and Sunday Roasts, and reservations are required. The season closes faster than people expect. If you have been meaning to go, this is the month.
The Andes Hotel. Still the reliable Main Street option in Andes, and the venue for a growing calendar of community events.
Wayside Cider, Andes. Wayside Cider makes unique hard ciders with heritage apples and has a full kitchen in Andes, NY. The porch is one of the better late-August sits in the county.
Blue Bee Cafe, Delhi. The weekday counter that Delhi actually uses. Meatloaf panini if you know, you know.
Strickland Hollow Tasting Room & Bottle Shop, Delhi. Worth mentioning because it quietly hosts small events that never quite make it to a listings page. Ask what is coming up when you stop in.
The drives that make it all connect
Everything above only works if you are willing to point the car somewhere. Three routes carry most of the traffic worth knowing about.
The Catskill Mountains Scenic Byway on Route 28 passes towns and hamlets like Margaretville, Andes, and Delhi; Catskill Scenic Route 30 runs along the East Branch of the Delaware River through valleys and the towns of Hancock, Colchester, Andes, Middletown, and Roxbury; and continuing on in Hancock, the Upper Delaware Scenic Byway on Route 97 offers a jaunt along the Delaware River for dramatic cliffside views and expansive vistas.
Route 30 is the one to take when someone visits for the first time. Route 97 is the one to save for the weekend you have the whole afternoon and want the drive to be the event.
The quiet argument underneath all of this
For a long time the case for Delaware County was subtraction. Fewer stoplights. Fewer cars. Fewer of the things that made the Hudson Valley start to feel like the Hudson Valley. That case still holds. With no stoplights, no cell service, and more cows than people, Bovina is as pastoral as it gets; rolling farmland, winding dirt roads, and weathered barns dot the landscape, but beneath the quiet exterior, this Delaware County town has quietly become one of the Catskills' most exciting culinary destinations.
What has changed is that the addition side of the ledger is now real. A new tasting room in Walton. A new kitchen in Margaretville. A diner reboot in Delhi. A festival in East Meredith with a Queens headliner. An art tour turning thirty. Enough that you can plan a weekend without repeating yourself, and enough that you should probably start booking on Wednesday for Saturday.
That is a different county than the one people describe from memory.
